This Festive Drink – How to Make It
WThis is a simplified take on a drink found on the seasonal drinks list. It's a batch prepared mix that's loaded with the tastes associated with Christmas time, rendering it perfect for hosting a celebration. Reserve the remaining citrus syrup for breakfast cocktails, desserts, or to make additional servings of this cocktail.

Serves 10 servings
For the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Directions
To prepare the Cordial: Combine all the components in a saucepan, bring to a light boil, mixing until the sugar dissolves. After that, take off the burner and let it to cool fully. Decant to a sterilised bottle, seal keeping it in the refrigerator, it can be stored for about a month.
For the Premix: Combine all the spirits and syrup in a sizeable container, leave to sit for one hour, then filter it , ideally through muslin, to ensure it's completely strained.
To serve: Pour 85ml of your batch mix into a stirring glass filled with ice, gently stirring carefully for a minute to cool it down. Pour to a cold coupe glass or equivalent, decorate with a few cranberries and finish using a quick spritz of the essential oil over the drink.
